Honey-glazed chicken with rice and peas is probably one of the best recipes that I’ve found in the past month.

I’ve made it about seven times since I found it, and I have yet to become tired of it. That, my friends, is how you know this stuff is top-notch. It’s easy to make, too.

Not to mention that it isn’t very costly, either. All-together, the ingredients amount to about $15. For a delicious meal that’ll yield at least one container full of leftovers, that’s not a bad deal.

So, if you, like me, enjoy the occasional quick, easy and relatively cheap meal, look no further.

You will need:

One-fourth cup of honey

Two tablespoons of soy sauce

One-eighth teaspoon red pepper flakes

One and one-half teaspoons olive oil

Two chicken breasts, cut into bite-size chunks

One pot (for the rice)

One pan (for the chicken)

One bowl (for the glaze)

One package of steam-fresh peas

Directions:

Whisk the honey, soy sauce, and red pepper flakes together, then let it sit while waiting for the chicken to cook.

Next, take the bit-size chunks of chicken and toss them into the pan, along with the oil. In five to ten minutes, once the chicken is cooked, throw the honey, soy sauce, and red pepper flakes together. Then, mix it and let the chicken marinate in the sauce for about seven minutes.

In the meantime, begin cooking the rice. Fill a pot with two cups of water, then add one cup of rice. Put a top on the pot and cook the rice for about 20 minutes on low heat.

While waiting for the rice to cook, prepare the peas. Now, for this recipe, you can just use frozen peas in a steam-fresh package. Put the package into the microwave for about 4 ½ minutes.

Once the rice is ready, mix the peas into it. By this time, the chicken should be ready as well. Add the honey-glazed chicken into the rice and peas mixture.

Once you’ve completed the steps listed above, sit back and enjoy your dish!
