One of my favorite late-night cravings recently got removed from the menu at my local Taco Bell. With the state being under quarantine, going out for a simple craving isn’t the wisest decision anyways. What to do when you want a delicious melty cheesy meximelt? Make your own copycat version at home.

The bonus to making this at home is tailoring it to your dietary needs. Many stores have a plant-based taco filling available, and gluten-free tortillas or dairy-free cheese. What really makes the flavor is the pico de Gallo.

Copycat Beef Meximelts

What you will need:

  • Flour tortillas
  • 2 cup bag of shredded cheese, Mexican blend
  • One pound of ground beef or ground turkey
  • Taco seasoning packet
  • Sour cream if desired
  • Pico de Gallo

Directions: Brown meat in frying pan, draining excess grease. In the frying pan, follow directions for taco seasoning packet. While the meat simmers, take flour tortilla and sprinkle with cheese blend. Stick tortilla in microwave for 20-30 seconds without scorching the cheese. Then put a teaspoon or more of pico de gallo on the tortilla and a dollop of sour cream (if desired). Spoon prepared seasoned meat into the tortilla and fold or wrap closed.
